Bella Grace Lemon Olive Oil adds a new dimension of richness to a classic favorite: velvety lemon bars with a lemon shortbread crust.
  • 1 cup softened butter
  • 2 tbsps Bella Grace Lemon Olive Oil
  • 1/2 cup powdered sugar
  • 2 cups flour
  • 4 eggs
  • 1 1/2 cups granulated sugar
  • 1/4 cup all-purpose flour
  • 1/4 cup Bella Grace Lemon Olive Oil
  • 1/4 cup fresh lemon juice

Preheat oven to 350F. In a medium bowl, mix 1 cup softened butter, 2 tablespoons Bella Grace Lemon Olive Oil, 2 cups flour, and 1/2 cup powdered sugar to make a dough for the shortbread crust. Use your hands to form a dough ball. Grease a 9x13 pan and press the dough into the bottom of the pan. Bake shortbread crust for 20 minutes.

While the crust is baking, whisk 1/4 cup flour, 1 1/2 cup granulated sugar, and 1 teaspoon baking powder in a small mixing bowl. In a separate bowl, whisk 4 eggs, 1/4 cup lemon juice, and 1/4 cup Bella Grace Lemon Olive Oil until smooth. Fold sugar mixture into the egg mixture and mix until blended. 

Remove the shortbread crust from the oven when the 20 minutes is over and pour the lemon mixture over the top to coat. Return lemon bars to the oven for 30 minutes. Remove and allow to cool completely. The bars will firm up as they cool. Sprinkle with powdered sugar and cut into small bars.
